Caprese Turkey Burger with Garlic Aioli Spread

I love cooking but can never really find the time- I mean, who really wants to prepare a lavish meal after a long work day? So I try to find recipes that I can tweak to fit my schedule, generally taking anywhere from 5 to 60 minutes.

I made a simple caprese salad with balsamic vinaigrette a few nights ago and had plenty of basil, tomatoes, and mozzarella left over. I'm always trying to think of great things I can make with the items already in my refrigerator, so out popped this idea!

Warning: I have unconventional methods of measuring, which is how I cook best! A little bit of this, a handful of that, a clump of this, and a dash of that.

 Garlic Aioli Spread
I got this recipe off of allrecipes.com and it's essentially a "cheat" recipe for garlic aioli. All of the taste and half the time... My kind of recipe. I changed it a bit to satisfy my garlic loving taste buds and to prevent left overs, but below is the original recipe!

Ingredients
3/4 cup mayonnaise
3 cloves of garlic, minced
2 1/2 tablespoons lemon juice
3/4 teaspoon salt
1/2 teaspoon ground pepper
Combine all ingredients in a bowl. Refrigerate for at least half an hour to mix flavors.

 Baked Caprese Turkey Burger

Amazing. Just amazing. Follow the directions below and get ready to drool (I'm drooling thinking about how delicious it was)!
While your aioli is mixing deliciously in the fridge, start prepping your burger.

Ingredients
1 1/2 pounds ground turkey
1/8 cup bread crumbs
1 egg white
1/2- 1 cloves of garlic, minced
1/4- 1/2 cup diced onions
Pinch of salt
Pinch of pepper

1-2 slices mozzarella per burger
2-4 leaves basil per burger
2 slices tomato per burger

I love garlic and onions so my version obviously had more of each!
Pre-heat oven to 350 degrees. Mix all items thoroughly together in a bowl. Form into patties- one huge patty? Six small patties? Up to you. Place on a pan and put in oven for 20-30 minutes or until cooked (internal temp of 165 degrees)

While it's cooking, prep your caprese garnishes into single serving sizes. Slice mozzarella, separate and wash basil, and cut tomatoes into slices. Here I used ciabatta bread for the bun. When burger is almost done, toast ciabatta for a few minutes. Take the aioli spread out of the refrigerator and spread it onto the bun. Pile on the rest of the ingredients and top with a piping hot turkey patty! And voila.. Enjoy :)
